For some unknown reason, I have never liked regular popcorn and so I LOVE this alternative. You can add soaked cashews or tahini to the mixture if you want it crunchier and more filling, but be sure to blend it all together in a high speed blender. You can flavor this however you like – with dried herbs, other spice blends (za’atar is delicious) or make a sweet version with cinnamon and a little maple syrup. This is my favorite though – I love the cheesy taste!
1 head cauliflower or romanesco, cut into florets
1⁄4 cup apple cider vinegar
1⁄4 cup vegetable broth
1⁄2 cup nutritional yeast
1 tsp turmeric
Pinch salt and fresh ground black pepper
For spicy, add...
1 tsp chili powder
1 tsp paprika
1 tsp cayenne
Mix the vinegar, broth, nutritional yeast, turmeric, salt and pepper (add spices now too if you are making this version) together in a large bowl. Add cauliflower and toss well. Make sure all the cauliflower pieces are coated in the marinade.
Leave in the fridge for a few hours and then dehydrate at 115 degrees until crisp. Usually 12 hours is enough.
